Château d’Esther is located very close to Bordeaux, in Saint-Loubès and, with its almost 6 hectares, is a real rarity: the winemaker Thomas and his wife Eva Fabian have created a true biotope.
The cultivation and production of wine is part of a cycle and an interaction between nature and humans.
Fruit trees are planted between the vine plants so that the nutrients and animals that these plants attract in turn naturally protect the vine plant.
This in turn attracts more animals so that the natural cycle can continue. Thanks to this unique method, Thomas does not use any pesticides.
The grapes are harvested manually once they have reached maturity.
Only natural yeast is used, which is already in the skin of the grapes, and there are only 50mg/L sulfite in the rosé wine.
No other products will be added.
The sugar content is also very low at 3g/l.

Thomas and Eva have been running Château d’Esther since 2001 and live on the farm with their children. Thomas originally comes from northern Germany and emigrated to France many years ago.
Today he is one of the few instructors in the field of biodynamics and lives the concept with full conviction. For this he was awarded the “Demeter” and “Refuge LPO” labels in 2006.
Through the biodiversity that he has created, he benefits from a biotope that develops naturally and is protected by him.
